Pancakes are a tasty and essential breakfast dish. These sweet treats, also referred to as hotcakes, can be made in various ways. Some versions include fruit such as blueberries, cherries, bananas, or strawberries, while others are enhanced with chocolate and whipped cream. Pancakes can also be made without leavening agents, resulting in a thin layer like crepes, or they can be made into thick layers for a scotch-style cake.


Regardless of the pancake's thickness or cooking style, there is one key secret to achieving perfect pancakes.

AVOID OVER MIXING THE BATTER. OPT FOR FLOUR WITH LOW PROTEIN CONTENT is another excellent tip for making ideal pancakes. Cake flour or pastry flour is suitable for pancake preparation due to its low protein content of about 7-8%. If you don't have cake or pastry flour available, don't worry. Simply use all-purpose flour and follow the recipe below to tenderize it.


Converting All-Purpose Flour into Fine Pastry Flour


Ingredients:


1 cup All Purpose Flour

2 Tbs Cornstarch


Directions:


  1. Measure 1 cup of all-purpose flour

  2. Remove 2 tablespoons of flour and add 2 tablespoons of cornstarch to the scant cup of flour.

To achieve the perfect pancake, the key is to minimize the time spent mixing the batter. Thus, it's advisable to prepare the wet and dry ingredients in separate bowls and only combine them when you're ready to cook the pancake.


Ensure you use a whisk instead of a spoon to mix the wet and dry ingredients when making the batter. The whisk will swiftly blend the ingredients while introducing air into the mixture. This air, incorporated into the batter, is released as steam and causes the cake to expand during baking. Additionally, the air aids in leavening the pancake during cooking. What Varieties of Pancakes Can I Make?


American Pancakes are an easy-to-make pastry that can be prepared in less than 15 minutes, based on the batch size. Known as hotcakes, these pancakes first appeared in the United Kingdom in the late 1500s. Globally, they are referred to as hotcakes, flapjacks, or simply pancakes. They have a smooth texture and a buttery, sweet taste.


Fruit Pancakes are made with either fresh or frozen fruit. Fruits like blueberries, cherries, bananas, and strawberries can be mixed into the batter or placed on top of the pancakes. They are often paired with whipped cream for added sweetness.


Scotch Pancakes, also referred to as drop scones, are a bit sweeter than American-style pancakes due to the addition of sugar in the batter. They are made by placing a spoonful of batter onto a hot surface, cooking for 1 minute, and then flipping to cook the other side. These pancakes are thicker and fluffier compared to the thin, flat pancakes known as Crepes.


Crepes are made without using raising agents such as baking soda or baking powder. This absence of raising agents in the batter leads to a thin and flat layer cake, unlike other pancakes, which are thicker and fluffier.

Preparation Time: 5-7 minutes

Directions:


  1. Heat a nonstick frying pan or griddle to medium heat.

  2. Add milk, eggs and vanilla flavor into a mixing bowl and mix the wet ingredients using a whisk until they are completely combined.

  3. In a separate bowl, add flour, salt, sugar and baking powder and mix the dry ingredients using whisk or fork.

  4. Once the pan or griddle is hot, pour the wet ingredients into the mixing bowl containing the dry ingredients and whisk until completely blended.

  5. Using a ladle, take a scoop of the batter and gently transfer to the pan. Use the bottom of the ladle to spread the batter to the pancake size desired.

  6. Cook the pancake on 1 side until little bubble start to appear (~1 minute). Then take a spatula and can carefully lift the pancake and turn over to cook the other side (~1 minute).
